At Los Dos Potrillos, the team leaned into a modern West Coast approach, loading it with bold Citra and Mosaic hops while keeping that crisp, clean backbone. Named after Chris Gilmore, the Director of Brewing Operations for LDP. The result turned heads, earning an impressive 97 from Craft Beer & Brewing and quickly becoming a fan favorite. Though it only makes rare appearances, Gil's Pils has built a reputation as the kind of beer worth waiting for.
